INGREDIENTS
140g butter/coconut oil
140g caster sugar
2 large eggs, beaten
120g self raising flour
1tsp baking powder
2 very ripe bananas, peeled + mashed
25g roasted peanuts, roughly chopped
25g soft brown sugar
25g WHEYD vanilla protein powder (optional)
METHOD
1️⃣ Preheat the oven to 180c/160c fan and line a loaf tin.
2️⃣ In a large bowl, whisk together butter and sugar until light and fluffy. Add the eggs and banana and mix well.
3️⃣ Mix in the flour, baking powder and WHEYD protein powder.
4️⃣ Pour the mix into the tin and sprinkle peanuts and brown sugar on top. Pop in the oven and cook for about 45 mins. Check at 25 mins and every 5-10 mins after to make sure it is perfectly cooked. Poke with a knife, if it comes out clean, you’re good to go!
